Morning Egg Bake


*When possible, use organic or local grown products.


This egg bake can be made with endless combinations to suit any palate. A crowd favorite is spinach, tomato, and feta.


Step 1: Whisk Until Well Combined

  • 6 eggs

  • 1 pint organic egg whites

  • ½ cup nut milk

  • Salt, pepper, and red pepper flakes to taste


Step 2: Toss in Your Favorite Ingredients

  • Spinach

  • Tomatoes

  • Peppers

  • Mushrooms

  • Sun-dried tomatoes

  • Potatoes (diced or shredded, pre-cooked until tender)

  • Cheese of choice (feta, cheddar, pepper jack, etc.)

  • Breakfast meat or meat substitute (vegan bacon, nitrate-free chicken bacon, etc.)


Step 3: Bake

  • Preheat oven to 350°F.

  • Bake for 20–30 minutes, until eggs are set and cooked through.


Tips

  • Use a muffin pan for small, individual servings.

  • Serve with avocado and toasted bread or an English muffin (such as sprouted Ezekiel or sourdough).
